Cooking Spaghetti Squash
Cooking spaghetti squash may seem daunting and time consuming, and you may be thinking that it is a whole lot of work with not enough payoff, even though it is a great source of nutrition! That’s exactly what I thought too!! I will let you in on a dirty little secret. I know that lot of people are anti microwave, and i really rarely use it, but sometimes I do if it comes to a choice between cary out, or a healthy home meal that is quick and easy.
It does take time cook spaghetti squash in the oven, but it is not hard! You just have to be home long enough before dinner time. that used to be no problem when my kids were little and I was blessed to stay home with them and play all day. Those were amazing days, and I had plenty of time to do things like have an hour or more to cook my spaghetti squash.
These days, my kids are grown and we are operating family business, which means long hours. The thing is, we are very sold on clean eating, exercise, and stress reduction. We have had to find easy ways to eat clean at home, including meal prep for healthy snacks and meals to take on the go. We love to take our strawberry banana smoothie on the go to!
So my dirty little secret is that you can actually, cook spaghetti squash microwave style, with great success. Cook it whole, and then cut it so that you don’t cut your finger off in the process. Those things are very hard before you cook them. The first time I followed a recipe on cooking spaghetti squash, it said to start by cutting it in half. I was terrified the whole time, so I switched to softening it first. Speaking of spaghetti squash recipes, you should try this amazing one topped with an amazing tomato cashew cream sauce. Spaghetti Squash Microwave – Cooking Spaghetti Squash
- You can wash the squash and microwave it for 15 to 20 minutes, until nice and soft.
- Carefully cut it in half, from stem to tail. Be careful because it will be very hot.
- Remove the seeds and save them for roasting!
- Now for the fun part! Take a fork and separate the squash into spaghetti strands! Kids love this part!
- Top with this delicious sauce and enjoy perfectly healthy, low carb, vegan dinner!
Tomato Cashew Cream Sauce
1 can of organic fire roasted diced tomato
1 can of organic salt free plane tomato sauce
1 small onion chopped
2 stalks of celery chopped
2 carrots chopped
2 – 3 cloves of garlic minced
Salt & pepper
1 cup of chopped walnuts
Brags amino acids
Salt and Pepper
Cashew Cream Sauce
About 1 cup of cashews (I soaked half in water for about an hour)
About 1.5 cups of water of water
Mix all ingredients in a blender
Combine the cream sauce with the tomato sauce and YUM you have delicious vegan cream sauce!
