Quinoa Vegetable Delight
1 cup uncooked quinoa (cook according to packaged directions)
1 bundle of asparagus chopped
1 zucchini chopped
About ½ of an eggplant leftover from vegi pizza video. You can look there to get the prep for the eggplant.
About 1-2 handfulls of baby kale
About ½ a can of leftover of diced tomato
About 16oz. of leftover cashew cream from our spaghetti squash video.
1 crushed garlic clove
Salt & pepper
