Almond Milk Ice Cream
I am jumping up down with joy and excitement right now! Why? You might think I’m crazy to be so excited over my new almond milk ice cream. That is unless you are a fellow “can’t have dairy” person. Perhaps dairy makes you feel like you might die, or maybe you are vegan or have some other such reason that prohibits the goodness of full dairy ice cream from your nutrition plan.
Ice Cream Sundae
Once upon a time I was able to anticipate the long awaited celebratory brownie ice cream sundaethat was reserved for special occasions, such as a birthday, or girls night, or just any night really. Or even day. The creaminess of that cold ice cream melting into the warm gooeyness of that moist brownie, all drowned in the richness of that hot fudge was something dreams are made of!
Ice Cream Sundae Party
Those ice cream sundae party nights came to a screeching halt when my stomach decided to turn rebel and twist with pain when that dairy and glutenous brownie filled it with yumminess. I had always ben able to eat anything I wanted, even though most of the time I followed a clean eating plan. Healthy eating and exercise have always been a part of my lifestyle, just because I like to feel fit and strong.
That is why it was a sad day when I had to give up my very favorite cheat, which was my fudge brownie sundae with a cherry on top. This treat was reserved for date night with my beautiful daughter. We had such fun laughing and talking while sharing that delicious dessert, so a replacement had to be found! We couldn’t give up our favorite treat and girl comfort food, just because our bodies no longer responded well to the ingredients!
Dairy Free Ice Cream
The search for the perfect dairy free ice cream began. Now, I will confess, I am a bit of a fitness and nutrition enthusiast, so I am not one to gorge on sugar very often. When I do have a sugary treat, I prefer it to be low in sugar so that I don’t get those terrible blood sugar swings that make me feel sleepy and lethargic. Most of the low sugar dairy free ice cream we could find contained lots of sugar, or else was sweetened with fake sugar. so those were a no.
In my opinion, fake, or artificial sweeteners are a million times worse for our health than real sugar, so I was determined to find a low carb option that used only a little natural sweetener. Good luck to me.
Guess what? We finally did find a wonderful almond milk ice cream that passed all of our criteria to make it worth the cheat. Guess what else? It’s really not even much of a cheat! Check out the nutrition facts and you will see why we feel ok to have it every once in a while when we feel the need to celebrate, or just pamper ourselves with a little food comfort.

The great thing about this almond milk ice cream is that people swear that it helps them lose weight and have a smaller waistline. That is probably due to the coconut oil, which we will talk about in another post. It also contains a healthy dose of fiber, and we all know that helps with proper elimination, which helps keep that waist line down. However, I would recommend sticking to the 1/2 cup serving. Too much fiber at once can have the opposite effect, so just a heads up there:)
